I am trying to cook more at home and feed my family a wider variety of foods. People can just read or join as co-authors. Topics don't have to be recipes with nice photos. Easy Taco Soup


This soup is what I make when the weather is cold, things are hectic and comfort food is needed. Also, it's just plain good and very quick to make. The sodium content looks high but remember this is for the full recipe. If it's a concern, use reduced sodium broth, tomatoes and corn. You can also drain and rinse the beans. For this particular one, I used pinto beans.
It's also a good vegetarian soup. Omit the meat and it's still very tasty. Need a little heat? Add a small can of chilies. The combinations are endless.


Easy Taco Soup


1 can diced tomatoes

1 can corn

1 can beans (pinto, kidney, black)

2 cans chicken broth

1 package taco seasoning

1 pound ground beef (used bison for this one)


Brown ground beef in a large pan. Drain. Add remaining ingredients (don't drain cans). Heat thoroughly.

Oh my! That looks yummacious, tricia! Gonna save this one. Been feeling the need for a good fiesta" meal. A few blue corn tortilla chips and some cheddar cheese and I'll be all set, now, with this recipe. And it won't take all day to prepare, either. Woohoo!

Sucks I don't like beans but that does look great! I'd be one of those weirdos that plucks out the beans.. which of course defeats the purpose.. but still the broth and meat would taste quite yummy :D

Bet you could use taters instead of beans and it would still be good. Yeah, use the little purple new potatoes that look all "native" and everything. That would look cool! And they're tasty too.

Leave out the beans Elsie. Potatoes, onions, peppers etc would be a great substitution. Takes less than 5 minutes to make so I have it many times during the year. Smoked sausage is also good in this soup.

Aww man.. that sounds.. divine.. seriously.. I went on another Wegman's trip and found that half of my purchases were powdered gourmet soups.. I couldn't find one that didn't have beans.. but still. .this is a nice one. Will DEFINITELY think of doing the substitutions. So many different varieties!

Ding! Ding! Ding! Ding! We have a winner, folks!!!

I made this for supper. I admit that I totally forgot to add the corn. I used 93% lean ground beef, a bag of pinto beans that Pete had cooked and I had put up in the freezer. I topped his with cheddar cheese and fresh minced onions. He loved it. Said it was a keeper.
Thomas had his with mexican 4 cheese mix and blue corn tortilla chips. He says it's a keeper, too.
I'm eating an orange right now, to help me from completely pigging out when I have my portion of this wonderful, easy to make, fills the house with a beautiful aroma, soup. :)

Okay, my report. The soup was mah-velous Dahling! Like I said, I forgot the corn, but I have some leftovers, so... will rectify that problem at that time. I think I would also like to try this with potatoes in it. Not that the beans were not good. I would just like to try it with the little blue ones like I was saying to Elsie. I think that would look cool and taste wonderful. Yeah! All remains the same except for beans I'll use blue new potatoes, and for the corn I'll use hominey. That's a real South Western thing that my nephew taught me. Then it would be sort of like authentic Pesole. Good stuff, that. I'll try it that way in a week or so and take some pictures to put with my report. Groovy tricia. I LOVE recipes that like to be changed around and played with. They are the best of all.

Hominy???? I love hominy. Something to put on my grocery list to go in the soup next time.

I need to look at all of the veggies at Wally World when I go. Maybe I'll get some inspiration for new variations. Thanks for the idea.

I'm thinking I want to get tricia's picture blown up to poster size and hang it on my wall. It looks so beautiful, like a work of art. If you guys haven't clicked on the pic and seen it in larger size... you really ought to. Its a true beauty. My soup didn't turn out nearly that pretty to look at, but it tasted really good. Mine wasn't as deep red as her's. Might just have been the brand of taco seasoning I used... ?
