Bacon Cheddar Spread
Time to clog your arteries and enjoy it at the same time. Great for people on a low carb diet but moderation is the key. This is good by itself, spread on a baked chicken breast (right before it's done and stick back in the oven) or baked potato. Don't freak about the strawberry preserves - looks like a dark glob in the picture but believe me...um, um, good. People at my work, especially the men, go nuts for this.
You can cook a package of bacon but it's so much easier to use precooked. Doesn't make your house smell like bacon either.
2 cups shredded cheddar cheese
1 jar real bacon bits (Hormel works great)
1 bunch green onions, chopped
Mayonnaise to bind everything together
Strawberry preserves
Wheat Thins
Combine first four ingredients in large bowl. Refrigerate for a while to let the flavors blend together. Serve on Wheat Thins with a dab of strawberry preserves on top.

I don't suppose you could substitute sour cream or yogurt for the mayo, could you?

The sour cream would probably be best - needs a salty taste.

Tricia, LOVE IT!!!!! Can't go wrong with this. On chicken, on potato. YUM. Made a dip myself. Onion soup, yoghurt, melted Edam cheese. Good but made me too thirsty.
Holly, I substitute low fat yoghurt for nearly everything, especially sour cream, because they don't have sour cream in Japan! Things get a little runny that way, so sometimes I mix half yoghurt, half softened cream cheese for a thicker consistency.

Have you tried draining the yogurt first? I use it a lot in place of mayo and I usually put it in a strainer or a bit of cheesecloth and let it sit for a while. That gets a lot of the whey (liquid) out of it.

Tricia your killing me. This sounds so good...except for the strawberry preserves...don't do strawberry. But the Wheat Thins and bacon spread...yum..yum.

Can't make it for myself - too easy to eat. Cream cheese with a little yogurt or sour cream sounds good too.

Dang.. except for the strawberries (glob or not.. LOL I was wondering what that was!).. I'd totally try this! With the mayo :) mmm.. mayo.. LOL sorry.. had a moment..

I'd try it with lingoberry jam. It's Swedish and very tart.

Oh! I love lingonberry jam! Bet that would go really good with this spread. yeah. lingonberries... yummmm... :)
